no-fuss chicken casserole
Serve this easy casserole with potato mash, steamed rice or cooked pasta.
serves 4 | prep 10 mins | cooking 35 mins
11/2 tbs extra virgin olive oil
2 small red onions, cut into thin wedges
2 garlic cloves, crushed
160g (1 cup) Sicilian green olives
1 tsp fennel seeds
700g btl passata
250ml (1 cup) salt-reduced chicken stock
125ml ( 1/2 cup) white wine
1kg chicken thigh fillets, trimmed, halved
400g can cannellini beans, rinsed, drained
1/2 bunch fresh basil, leaves shredded, plus extra leaves, to serve
1 lemon, rind finely grated, juiced
