GRILLED HALLOUMI AND MUSHROOMS WITH PAPRIKA AND CREAM CHEESE

INGREDIENTS: (4 servings)

- 2 tbsp low-fat cream cheese
- 1 spring onion, finely chopped
- 1 sprig rosemary, finely chopped
- 1 sprig thyme, finely chopped
- 1 tsp paprika
- Juice of ½ lemon
- 1 tbsp olive oil
- 4 large field mushrooms, stalks removed
- 4 slices rye bread
- 200g halloumi, sliced
- Thyme, to garnish
- Salt and pepper, to taste

METHOD:

Combine the cream cheese with the spring onions, rosemary, thyme, paprika and lemon
