THE ULTIMATE BEEF BURGER

SERVES 4 PREPARATION: 15 MIN COOKING: 15 MIN

PATTIES

15ml (1T) extra-virgin olive oil
2 onions, finely chopped
500g beef mince
1 egg, lightly whisked
160ml (²/3c) fresh breadcrumbs
15ml (1T) Worcestershire sauce
salt and freshly ground black pepper

TO FINISH

4 slices cheddar cheese
4 hamburger buns, cut open
30ml (2T) butter
4 small butter lettuce leaves
250ml (1c) tomato relish or chilli jam
4 dill pickles, sliced
2 small tomatoes, sliced

1 Patties Heat some of olive oil in a large pan over medium heat. Cook the onions until golden and caramelised (about 15 minutes) while stirring continuously. Allow to cool.

2 Combine the mince, cooked onion, egg, breadcrumbs and Worcestershire sauce in a large bowl. Season with salt and pepper and mix well.

3 Shape the mince mixture into 4 patties.

Heat the rest of the oil in a large frying pan over medium heat. Fry the patties, turning once,
