VEGAN CHILLI
This chilli shows that the best vegan food can be as satisfying as any meat dish.
SERVES 6
✣ 1tbsp olive oil
✣ 1 large onion, diced
✣ 1 stick of celery, diced
✣ 1 carrot, diced
✣ 2 small sweet potatoes, cut into 2cm (¾in) chunks
✣ 3 garlic cloves, minced
✣ 2tsp ground cumin
✣ 1tsp paprika
✣ 1tsp ground coriander
✣ 1tsp ground cinnamon
✣ ½tsp cayenne pepper
✣ 2tbsp tomato puree
✣ 75g (2½oz) sun-dried tomatoes, chopped
✣ 1 red and 1 yellow pepper, cut into chunks
✣ 400g can black beans
