Easy meals for MIDWEEK

VEGAN CHILLI

This chilli shows that the best vegan food can be as satisfying as any meat dish.

SERVES 6

1tbsp olive oil
1 large onion, diced
1 stick of celery, diced
1 carrot, diced
2 small sweet potatoes, cut into 2cm (¾in) chunks
3 garlic cloves, minced
2tsp ground cumin
1tsp paprika
1tsp ground coriander
1tsp ground cinnamon
½tsp cayenne pepper
2tbsp tomato puree
75g (2½oz) sun-dried tomatoes, chopped
1 red and 1 yellow pepper, cut into chunks
400g can black beans
