Cauliflower-Crust Pizza with Mushrooms & Olives

SERVES 2 TO 4. HANDS-ON TIME: 30 MINUTES. TOTAL TIME: 45 MINUTES.

Making your own cauliflower crust only takes a few minutes and a handful of ingredients, so it’s well worth it for that homemade taste. Simple toppings are enough to make this meal shine – feel free to customize to your taste, but do remember to keep it light, as too many toppings can overload the delicate crust. For a spicy kick, serve with a sprinkle of red pepper flakes.

TOPPING

1 tbsp avocado oil (TRY: Chosen Foods Avocado Oil)
5 oz cremini mushrooms, sliced
¼ tsp sea salt
⅓ cup marinara sauce
¾ cup shredded mozzarella
2 tbsp sliced black olives
fresh basil sprigs, optional

CRUST

avocado oil, for brushing
1 10-oz pkg frozen cauliflower rice, thawed
1 large egg
½ cup blanched almond flour
½ cup shredded mozzarella
¼ cup arrowroot starch
1 tsp garlic powder
¼ tsp sea salt
