Beetroot, orange and goat’s cheese salad with walnut dressing v
SERVES 6 as a side, 4 as a main
• 5 beetroots, a mix of colours, peeled and thinly sliced
• 2 baby gem lettuce, leaves separated
• 2 oranges, skin removed, flesh sliced and halved
• Olive oil, for drizzling
• Small bunch of chives, chopped
• 1 small goat’s cheese
• 40g walnuts, toasted and roughly chopped
FOR THE WALNUT DRESSING
• 50g sourdough bread
• 40g walnuts
• 2 lemons, juiced
• 1 garlic clove
• 110ml water
• ½ tsp salt
