Eggplant dip with grilled dates

SERVES 6-8

“Eggplant usually only takes 15-20 minutes to get soft and smoky, making this an easy appetiser to pull together while you cook the rest of the meal,” says Eric Werner.

1 large eggplant
½ cup pitted dates
½ cup roasted walnuts, finely chopped
2 tbsp roasted garlic oil
1 tbsp roasted garlic, crushed
1 tbsp freshly squeezed lemon juice
Toasted pita or focaccia, to serve

Heat a barbecue (preferably woodfired) to high
