Treat them to a posh fish supper

Lobster burgers

TAKES 30min SERVES 2

INGREDIENTS

 1 x 700g lobster  1 avocado, peeled  ½ red chilli, deseeded and finely chopped  Juice of ½ lime  1tsp chopped coriander leaves  1tsp soured cream  2 brioche burger buns, split  Sunflower oil, to fry  100g fine polenta  Mayonnaise, cos lettuce and tomato slices to serve

1 Buy the lobster on the day you intend to cook it. It needs to be halved lengthways with the tail and claws removed (have a fishmonger do it).

2 Bring a large pan of water to the boil with 1tbsp salt per litre, and place a large bowl of iced water in the sink. Reduce the pan to a simmer, add the lobster tail and claws and poach for 4min or until the meat becomes white. Transfer to the iced water.
