Cooking with hemp

Hemp & Mushroom Risotto

This is an interesting way to use hemp. It has a clean and creamy texture and flavour.

Serves: 4

1 onion, finely diced
2 cloves garlic
8 medium mushrooms, sliced
2 sticks celery, finely diced
2 cups hemp seeds
6 cups liquid vegan
Massel Chicken
Style stock
1 bunch flat-leaf parsley, chopped
½ cup nutritional yeast
Salt & pepper to taste

Heat frying pan over medium heat.

Add onion, garlic, mushrooms and celery and sauté until soft.

Add hemp seeds and stock. Mix well and cook until stock is mostly absorbed and resembles wet risotto. Add parsley, nutritional yeast and season with salt and pepper to taste.

Serve in bowl.

Hemp Granola with Berries

I always have a jar of my hemp granola in the pantry and a freezer full of mixed berries. It then becomes super easy to throw them in a bowl and top with your favourite plant-based milk.

Serves: 4

Make your hemp granola in advance and keep a freezer filled with mixed berries so you can make this delicious breakfast when you feel like it.

Hemp Granola

1 cup hemp seeds
800g raw muesli
3 cups apple purée
1 tsp vanilla
1 tsp ground cinnamon
2 tbsp maple syrup
4 cups fresh mixed berries
4 cups Bonsoy soy milk

Preheat oven to 180°C. Line 2 baking trays with greaseproof
