BUDDHA BOWL OF BROWN RICE, SWEET POTATO, CHICKPEAS & TAHINI SAUCE
You will feel nothing but 100% healthy and good after eating this satisfying Buddha Bowl. Lots of colour and texture make for a happy feeling dish!

■ 1 mug of brown rice, cooked to packet instructions■ 1 large sweet potato, washed and cut into rounds■ ½ tin of chickpeas, drained■ 1 pak choi, chopped and steamed■ 1 small beetroot, spiralised or grated■ 1 red onion, sliced■ ¼ cucumber, sliced■ ½ tsp of chilli flakes■ 1 tsp of paprika■ 1 tsp of cumin seeds■ 1 tbsp of olive oil■ 2 tbsp■ 1 thumb piece of ginger, grated■ 1 garlic clove, minced■ 2 tsp of agave syrup■ 2 tbsp of boiling water
