1 Sour Cherry Pie

The overflow of bubbly, sweet juices is part of the fun of summer-fruit pie-making: Just be sure to bake this one atop a foil-lined, rimmed baking sheet to get out in front of any mess. As with all fruit pies, creating an amply thick crust around the edges will help prevent the dough from overcrisping before the filling is sufficiently thickened.

For the pie dough:

Ice2½ cups all-purpose flour1 Tbsp. natural cane sugar, plus 2¼ tsp. kosher salt2 sticks (8 oz.) cold unsalted butter, cut into small cubes1 large egg, for brushing
