CRUNCH TIME

SPICY PARSNIP CHIPS

 Turn your prolific parsnips into a crunchy snack with a warming hint of chilli.

SERVES 3

■ 600g/1¼lb parsnips
■ 2 tbsp olive oil
■ ½ tsp chilli flakes
■ a pinch of salt.

1. Preheat the oven to 180C/fan 160C/ gas 4.

2. Using a mandolin or sharp knife, slice the parsnips very thinly. Tip into a bowl, and then drizzle over the oil. Sprinkle the chilli and toss to coat evenly.
